Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition.  In Greek mythology the pomegranate symbolized the ‘fruit of the dead’ growing from the blood of Adonis.  It is traditional to consume pomegranates on Rosh Hashana as its numerous seeds represent prosperity.  I like pomegranates for the vivid crimson arils.  They glisten with pomegranate juice appearing translucent in the sunlight.
